Theory wise, I'm positive you'd still have 4/4 or whatever time signature you're using, and you'd just be using quintuplets for the song instead of making the time signature some weird 4/5 thing. But sometimes, that's okay, and makes it a little more human. I did this in FL studio two nights ago coincidentally, but of course it wasn't perfect.
